I love cooking but sometimes I am in a total loss of what I should make for dinner. Chicken is by far my favorite ingredient to plan dinners around. However, there are days that a meatless recipe is what I am craving. Even though I don’t follow a plant-based diet, I am trying four out of seven days a week to create meatless recipes at home. By switching a meal (or four) per week for a meatless version, I improve my nutrition, increase my vegetable intake, reduce my carbon footprint, and help save a little cash. There are so many recipes nowadays that I find constant inspiration around the web. From sheet pan and one-pot recipes to delicious salads and soups, the options are numerous. Below, I gathered nine meatless recipes that I want to make in the coming weeks to mix things up and can be a great base when you meal plan. Bon appetite!
